Not everyone likes Chaffles. WAIT! WAIT! Hear me out. The basic recipe calls for cheese and eggs. Of course, traditional waffles use eggs, so it's the cheese that makes these different, and what makes them suitable for low carb diets...And what gives them the name cheese-waffles-- Chaffles! Using different cheeses, adding nut flours and flavorings of various sorts can produce a wide variety of Chaffle types, designed to suit the tastes of different people. Personally, I have tried colby-jack, baby swiss, and mozzarella with the required eggs and did not like any of them! At all! (Well, the mozzarella one wasn't as bad.) Fortunately, the first recipe I found and tried used cream cheese, and oh my goodness! Heavenly! Life changing!

The small size waffle irons (e.g. Dash Mini, right) are often preferred for several reasons. They're inexpensive to purchase and easily portable, handy in RVs or dorm rooms. They make small chaffles that are perfect size for hamburger buns, or to be frozen and easily toasted in a standard size toaster, etc. However, a large waffle iron will work just fine, if that's what you have. Adjust batter amounts to work with your iron.

The Multi-Purpose Chaffles recipe (below, right) makes five 4" diameter chaffles, each one about 2 grams net carbs. They are versatile, usable for anything from hamburger bun to strawberry shortcake (below). Of course, you will need to add in the carb count of any toppings or fillings used.

Ingredients:

·
2 eggs (room temperature)
2-oz. (1/4 cup) cream cheese (room temperature)
· 1 teaspoon vanilla extract
· 1 Tablespoon coconut flour
· 1 Tablespoon flaxseed meal (or other low-carb nut flour)
· 1 teaspoon Lakanto Golden Monkfruit Sweetener
(or alternate sweetener)
· 1/2 teaspoon baking powder

Instructions:

i· Moist ingredients: Start by beating the eggs, then mixing in room temperature cream cheese, and the flavoring extracts.
· Dry ingredients: In a separate cup or bowl, combine the flours, sweetener and baking powder, stirring with a fork.
· Add the dry ingredients to the egg-creamcheese mixture and stir until thoroughly mixed.
· Cook in waffle iron for about 3 minutes, or until steaming stops.

Snickerdoodle Chaffles!

Ingredients:

·
2 eggs (room temperature)
2-oz. (1/4 cup) cream cheese (room temperature)
· 1 teaspoon vanilla extract
· 1/2 teaspoon maple extract
· 1 Tablespoon coconut flour
· 1 Tablespoon flaxseed meal (or other low-carb nut flour)
· 1 Tablespoon Lakanto Golden Monkfruit Sweetener
(or alternate sweetener)
· 1/2 teaspoon baking powder
1/2 teaspoon cream of tartar
1/2 teaspoon ground cinnamon

Sprinkle with sweetened cinnamon.

Chocolate Chaffles!
Perfect for Ice Cream Sandwiches

Ingredients:

·
2 eggs (room temperature)
2-oz. (1/4 cup) cream cheese (room temperature)
· 1 teaspoon vanilla extract
· 1/2 teaspoon rum extract
· 1 1/2 Tablespoon unsweetened cocoa
· 1 Tablespoon coconut flour
· 1 Tablespoon flaxseed meal (or other low-carb nut flour)
· 1 Tablepoon Lakanto Golden Monkfruit Sweetener
(or alternate sweetener)
· 1/2 teaspoon baking powder
· 1/4 teaspoon salt

Fill with your choice of sugar-free ice cream.

 Sweet Maple Chaffles!

This is a super-simple recipe that avoids nut flours or anything that will add carbs. The cream cheese will have less than one net carb (if you use the pictured brand) and that's all. These chaffles can even be used on a typical keto "egg fast."

· 1 egg (room temperature)
1-oz. cream cheese (room temperature)
· 1 teaspoon Lakanto golden monkfruit sweetener
(or your preferred brown sugar substitute)
· 1 teaspoon maple extract

Butterscotch Chaffles!

Like the previous recipe, this one doesn't use nut flours. So the chaffles can be used on a typical keto "egg fast." And, with the additional melted butter, it can double as a "fat bomb."

· 1 egg (room temperature)
1-oz. cream cheese (room temperature)
· 1 teaspoon melted butter

(or melted butter/oil spread)
· 1 teaspoon Lakanto golden monkfruit sweetener
(or your preferred brown sugar substitute)
· 1 teaspoon rum extract
· 1/2 teaspoon vanilla extract



Yeast "Bread" Chaffles!

One of the things that many of us miss the most is bread. Well, this isn't bread, but it's a yummy alternative, with the flavor from yeast, and a texture that holds up well to spreading peanut-butter& jelly or other toppings. (Although each chaffle will be less than 2 net carbs, don't forget to add in your toppings. For instance, the pictured the pb& j (below right) adds a total of 4 net carbs.) The recipe makes 8 or 9 chaffles.

Ingredients

· 4 eggs (room temperature)
· 4-oz. (1/2 cup) cream cheese (room temperature)
· 2 Tablespoon coconut flour
· 2 Tablespoon flaxseed meal (or other low-carb nut flour)
· 1 Tablespoon Lakanto Golden Monkfruit Sweetener
(or alternate sweetener)
· 1/2 teaspoon baking powder
· 1 packet instant yeast (Rapid Rise)

Instructions:
· Moist ingredients: Start by beating the eggs, then mixing in cream cheese, and the flavoring extracts.
· Dry ingredients: In a separate cup or bowl, combine the flours, sweetener and baking powder, stirring with a fork.
· Add the dry ingredients to the egg-creamcheese mixture and stir until thoroughly mixed.
· Mix in the yeast and allow to bubble a bit. (Since this is not a standard bread dough, it will not rise and cannot be kneaded.)
